Mint yoghurt sauce, crunchy kale, sea grapes, crispy perilla, inspired by a local’s favorite

Soup - Smoked Grouper
Sihanoukville grouper, sweet corn, shitake mushroom and seaweed chips,reflecting the chef’s training in Japan

First Main Course - Garden Trio
Caramelized white radish, red cabbage puree, water chestnut, vegetable jus, a gentle nod to the rainy season

Refresher – 365-day Pink Lady
With jambolan plum wine, herbal Kulen gin,modern reflection of Cambodia’s rice wine tradition

Second Main Course - Dry-aged Pigeon
Roasted with local herbs, baked potatoes, orange sauce, elevated with techniques from the chef’s training abroad

Dessert - White Cloud
Seasonal Cambodian fruits, organic farm eggs, basils and lemon gel, caramel cashew nut ice cream, a seasonal creation inspired by the rain
