The Embassy team is delighted to present our Champagne, Wine, and Herbal Pairing experience. This unique concept showcases selections that complement and enhance the delicate flavors of Khmer cuisine. For guests who prefer not to consume alcohol, we also offer a refined herbal pairing, featuring teas and infusions thoughtfully matched to our dishes.

Our champagnes and wines have been carefully selected with the guidance of our wine master, his jury team of suppliers, and our culinary expert. Some pairings may amaze you. Others may surprise you. We invite you to savor this gastronomic journey, where Khmer gastronomy meets the elegance of champagne, wine, and herbal infusions.

Our Wine Pairing

The Embassy team are pleased to propose our monthly wine pairing. The idea is to suggest wines which complement and enhance the flavours of the Khmer Cuisine. We select wines with the support of a team of sommeliers from around the world.

Some may amaze you. Some may surprise you. We hope you will enjoy this gastronomic experience, combining Khmer gastronomy and wines of the world.

Classic Wine Pairing

Starter:
Te Pa Riesling, Riesling, New-Zealand.
This gorgeous single-vineyard wine possesses a lovely bouquet of citrus blossom, mandarin peel, honey and ginger. The palate has lemon, melon, and green apple flavours, with a touch of spice, a hint of sweetness
First Main Course:
M. Chapoutier Bila-Haut Cotes du Roussillon Villages Blanc, Grenache Blanc / Grenache Gris / Macabeu, France.
Fresh and very aromatic attack. The palate is round with a great acidity and finish mixed with salty notes, which express the minerality of the wine
Second Main Course:
Côtes-du-Rhône Stéphane Ogier “Le temps est venu”, Grenache Syrah, Mourvedre, France.
Brighter notes of violets and blueberries hint of freshly ground coffee . Medium to full-bodied, and utterly charming - a real pleasure to drink.
Dessert:
Moscato d’Asti DOCG Torlasco, Moscato, Italy.
Sweet, full and mellow. The aftertaste is intense, with clearly perception of the Moscato aroma.

Premium Wine Pairing

Starter:
Sul Vulcano Etna Bianco DOC, Carricante, Italy.
Fresh and savory, characterized by a marked minerality and persistence; a wine that displays great finesse and complexity.
First Main Course:
Mâcon Les Bruyeres Domaine Guerrin & Fils, Gamay - ORGANIC, France.
Intense aromas, the wine in a fine blend of fresh red fruits (raspberries and cherries) a touch on the palate,aromas and freshness are present.
Second Main Course:
Marques de Riscal Reserva, Tempranillo/Graciano, Spain.
Intense black-cherry colour with good depth of colour and hardly any signs of evolution. Very expressive aromas on the nose with notes of liquorice, cinnamon and black pepper, with just a subtle hint of the long cask-ageing. Fresh and easy to drink on the palate, good backbone and lovely, polished tannins.
Dessert:
Susana Balbo, Late Harvest Torrontes, Torrontes, Argentina.
A wine with yellow color and golden hues. The displays delicate, floral aromas combined with exotic fruits. Its finish is balanced, elegant and persistent.
Dessert:
Sampan Cellar Series 2020 Ex-Cognac Blend 45%, Cognac, Vietnam
is a Vietnamese pure cane juice rum aged for 3 years in ex-Cognac barrels and finished in Port casks. aromatic profile featuring sweet spices, dried fruits, oak, and a slight maritime saltiness, characterized by notes of fig, vanilla, and mocha.

Our Organic Herbal Pairing

Our organic herbal pairing is not a tea, it is a selection of local herbs chosen for their flavor and natural benefits, helping digestion and promoting restful sleep.

Inspired by our ongoing exploration of local plants, roots, and flowers, these infusions are paired dish by dish with our set menu, just like a wine pairing. They offer a refined, non-alcoholic alternative throughout your meal.

Champagne Pairing

Appetizer:
Cazals Bulles de Craie Blancs de Blancs Brut.
The “Bulles de Craie” offers floral and fruity notes dominated by citrus fruits. It is lively, with a hint of salinity reminiscent of oyster shell and a touch of the chalky terroir its name evokes A lot of purity and grace in this bright cuvée.
First Main Course & Second Main Course:
Franck Bonville Blanc de Blancs Brut Grand Cru
Undoubtedly the cuvée that best represents the Bonville style. It reflects our vision of a Blanc de Blancs from the Côte des Blancs: remarkable finesse and elegance, with a beautiful minerality wrapped in the creamy texture brought by careful vinification and the integration of reserve wines.
Dessert:
Larmandier Bernier Latitude Blancs de Blancs Extra Brut.
The NV Extra Brut Blanc de Blancs Latitude is stellar in this range. Broad and ample, the Latitude is so impressive. Lemon confit, marzipan, tangerine peel, mint and chalk are dialed up. More than anything else, I am so impressed with the wine’s sheer palate presence. There’s gorgeous density and character here.
