The Embassy team is delighted to present our Champagne, Wine, and Herbal Pairing experience. This unique concept showcases selections that complement and enhance the delicate flavors of Khmer cuisine. For guests who prefer not to consume alcohol, we also offer a refined herbal pairing, featuring teas and infusions thoughtfully matched to our dishes.

Our champagnes and wines have been carefully selected with the guidance of our wine master, his jury team of suppliers, and our culinary expert. Some pairings may amaze you. Others may surprise you. We invite you to savor this gastronomic journey, where Khmer gastronomy meets the elegance of champagne, wine, and herbal infusions.

The Embassy team are pleased to propose our monthly wine pairing. The idea is to suggest wines which complement and enhance the flavours of the Khmer Cuisine. We select wines with the support of a team of sommeliers from around the world.

Classic Wine Pairing

Starter:
Quinta Do Pressegueiro – Aluze Branco Rabigato / Viosinho / Gouveio, Portugal
Crisp and juicy with citrus and light tropical fruit, elegant balance, and a refreshing finish — a classic fresh Douro white.
First Main Course:
The hermit Crab, Viognier, Marsanne, Australia
Shining pale golden colour. Fragrant aromas of tropical fruits like pineapple, melon, white peach and citrus blossom. Long and refreshing with bursting avours through the nish. Perfect wine to pair with Asian food.
Second Main Course:
Radford Dale Vinum Grenache, Grenache, South Africa
Medium-bodied and juicy with smooth, vibrant fruit on the palate and a lingering, elegant finish.
Dessert:
Monmousseau – Loire Valley Sparkling Chenin Blanc, Chardonnay, France
Monmousseau Etoile Brut is a well balanced sparkling wine, with incredible value fizz. It has a -wonderfulbalance of slight acidity and offering a fine balance between fruitiness and minerality. It is versatile and can be enjoyed as an aperitif or paired with light dishes.

Ballet slipper pink. Ripe white stone fruit with notes of musk and strawberry. Dry and crisp with sherbet like acidity.

The Diamond Collection Pinot Noir offers a gorgeous fragrance and silky mouthfeel. Its elegant character and impeccable balance reflect an exceptional vintage and phenomenal fruit quality.
Dessert:
Cremant de Loire Monmousseau Cuvee Ciselee Chenin / Chardonnay / Cabernet Franc, France
Elegant, crystalline and delicately chiselled. Fine aromas of juicy pear, green apple and white flowers, underpinned by a hint of fresh almond and golden brioche.
Dessert:
Rum Dynasty, Famille Ricci, South America-caribbean
Aged in Bourbon, Cognac, Sauternes, and Pineau casks, it’s smooth and refined, with pastry notes and aromas of vanilla, honey, spice, and wood.

Our Organic Herbal Pairing

Our organic herbal pairing is not a tea, it is a selection of local herbs chosen for their flavor and natural benefits, helping digestion and promoting restful sleep.

Inspired by our ongoing exploration of local plants, roots, and flowers, these infusions are paired dish by dish with our set menu, just like a wine pairing. They offer a refined, non-alcoholic alternative throughout your meal.

Cucumber, Combava Zest & Long Basil
Refreshing flavor in mounth with light aroma from herb.
Organic Herbal 2:
Roeng Phnom & Black Pepper
Subllte of the flower hint and lightly spicy and flavorfull from pepper hint.
Organic Herbal 3:
Tumaric, Galangal, Khmer Basil
Slightly yellow flower from the root and lightly spie and Aromantic from the herb.
Organic Herbal 4:
Bael Fruit, Cinnamon, Jun Plum
Slightly sweet and sour, aromatic and pleasant, with a strong aroma.
Organic Herbal 5:
Rosell & Ginger
Lightly sour flavor with freshing of aroma benefit rich in vitamin C and Antioxidant.

Champagne Pairing

Appetizer:
Jose Michel Tradition
The color is yellow pale; bubbles are delicate and intense. The nose is very aromatic and shows a seductive bouquet with hints of citrus fruits, lemon and mandarin. The mouth bears intensity and good length on the palate. Full and structured, with hints of lemon, wax and grapefruit.
First Main Course & Second Main Course:
Franck Bonville Blanc de Blancs Grand Cru
It perfectly illustrates the idea we have of a Blanc de Blancs from the Côte des Blancs: great finesse and elegance, beautiful minerality enveloped in softness. The first aromas of white flowers emerge, opening onto notes of white peach and grapefruit. The energy of this blend gives rhythm to the tasting. The salty finish echoes for a few more seconds. The finesse and tension of this wine often invite us to share a bottle as an aperitif or with dessert.
Dessert:
Cazals Bulles de Craie
Yellow pale color, with a nose of citrus fruits. Mouth brings fresh sensations with well-balanced acidity. The finish is lemony, iodized and slightly chalky. Accompanying your gourmet moments, this Blanc de Blancs offers the ultimate culinary experience pairing with dessert and aperitif.
